
This healthy ricotta pancakes with berries & yoghurt recipe is super easy, will take 5 mins to prepare and just one minute for the family to devour!

Healthy Ricotta Pancakes with Berries & Yoghurt

Ingredients
- 2 large eggs
- 1⁄3 cup milk
- 1⁄3 cup wholemeal flour (or gluten-free if needed)
- 1 tsp baking powder
- 150g fresh ricotta
- 1⁄2 cup blueberries (not defrosted if frozen)
- 2 tbs Greek yoghurt
- 75g strawberries, sliced
Whisk eggs, milk, flour and baking powder in a bowl. Gently fold ricotta through (little chunks are good) and stand for 5-10 minutes. Add blueberries, don’t over stir or berries will ‘bleed’.
Method
Heat a non-stick frypan over medium heat.
Add a 1⁄4 of pancake mixture and cook until bubbles appear on the surface, flip and cook for a further 2 minutes.
Repeat with remaining mixture.
Divide pancakes between two plates and top with yoghurt and sliced strawberries.
